What are floating breakfasts, and why have they become so popular?

I think that it's not comfortable to eat breakfast in cold water or hot spa. I would like to concentrate on either bathing or eating.
And there is high possibility to turn over breakfast into water.
Even if it's representative of luxurious hotel, I don't want such a breakfast style.
