There are many controversies about assessment process of Michelin Guide. But, in the first place, hygiene won't be included in factors to decide how many stars they want to give restaurants. I guess they don't care about it unless interior of the restaurants are so dirty as to discourage them to eat food. So, there will be more Michelin-starred restaurants serving poisoned foods until Michelin Guide consider minimum hygiene levels seriously.
